Moonlight

Similar to Heavenly, branded with its soaked grape leaf which adds a light grassy note with slight tartness (young); beautiful mushroom notes proceed a light tangy richness and heavenly creaminess (ripened). As creamy as it gets, this cheese remains playful and never too sharp.

Heavenly

Named for its heavenly texture and taste, with a light exterior and simplistic purity. Subtle floral tastes finish light and tart with an almost crumbly texture, rich and creamy with distinctive goats milk aromatics (ripened). Most popular with our French visitors as this cheese is similar in texture and taste to the most beautiful of the French soft ripened goat’s cheese.

Big White:

The newest member of Carmelis cheese family. Silky smooth and zesty, beautifully balanced by light mushroom with a distinctly camembert Perfection. Its flavour intensifies as it ripens becoming sharp and ridiculously creamy when fully ripened.

Misty

Distinctive to the eye with its ash coating and slightly molted surface. Ash you ask? Kiln charred root vegetables into ash and used traditionally in French cheese making and imported to our dairy for your cheese tasting enjoyment. Misty has beautiful floral notes followed by delicate fermented taste of white wine or ale. Crumbly and slightly tart (young); becomes more bold, earthy and creamy, but never sharp (ripened).

Picollo

Named for what it is small and sharp. Its sharpness comes with age and in its youth. Actually is a lot like misty with its ash coating. Picollo packs more robust earthy and mushroomy flavors with great texture becoming more creamy and intense with a good sharp bite as it ripens.

Chabichou:

Related visually and characteristically to the  French ‘Chabichou’ with its blooming, sometimes mottled white surface it has a fresh, sweet, mild flavor with a fun tangy finish(young); becoming piquant and nutty with a wonderful yet surprising heated finish (ripened) . Texture begins mild and crumbly again, grows creamy and rich as it ripens.

Hard Aged Cheeses - Made from raw goats milk

Goat Gruyere:

Swiss Gruyere in design with this sweet, fruity perfume that carries through on the palate with richness and nutty subtleties and finishes long with a pinch of heat. Beautiful fondue cheese melts marvelously or enjoy simply with a local Chardonnay or dry red wine. Mild- up to 8 months or Stronger- 1+ years.

Carmel:

This cheese has Cheddar like texture becoming sharper and more crumbly with age and has a depth of onion-like pungency as it finishes. Partners with many local fine red wines rich in fruit and body. Also wonderful on pizza, pasta and in sauces etc.

Smoked Carmel:

Follows all structural identity, identical to Carmel, but is liberated by its radical smokin’ sharpness. A healthy alternative to bacon and other smoked meats to crown spinach or Caesar salad, pasta, soup or ‘smokin’ gourmet pizza.

Lior:

After a 1 ½ year sabbatical, Lior is ready to come back and join Carmelis’ team of Phenomenal artisan cheeses, lets just say the team is now stacked. Lior is the ultimate nibbling cheese with dry grana texture, sharp and tart with sweetness trickling through each nibble. Excellent for grating to add kick to salads, pastas, croustini, and dips, etc.

Lior Special Edition:

One year old with the same building blocks(bacteria) as Lior, but riddled with whole peppercorn and surrounded by bay leaves. With such an infusion this cheese cant help but be delicious. Recommended for soups ,pastas and cheese nibblers alike.

Vintage:

A truly Okanagan cheese, Vintage has not only been created at Carmelis, but it has also been bathed for five whole days in Cedar Creek’ s Pinot Noir and Foch grape skins(for tannin) from St. Hubertus winery, and then aged for 1.5 years. Unlike our human natures, Vintage remains deeply sharp though under the influence. Makes a great conversation piece aboard cheese platters or shredded delicately on a favorite salad.

Goatgonzola:

Our signature Blue Cheese is characteristically correct with a crumbly, yet rich texture and its ‘gonzola’ like sweetness, nuttiness, earthiness then finishes sharp and spicy. A Canadian cousin to Europe’s Blues Brothers (Roquefort and Goatgonzola). Pairs well with local late harvest, Ice or Port styles wines
