Misty:
“Cendre” or “covered with ash”. A mist of charbon vegetable (kiln charred root vegetable ash) has been applied to the exterior of this cheese before ripening. Common in French goat’s cheese of this genre, the ash creates an earthiness to this aromatic cheese. It is a creamy, full bodied and slightly fruity cheese when fully ripened.

Blue Velvet:
This cheese has a beautiful bloomy white to velvety blue/gray surface mold and becomes increasingly creamy, nutty and piquant as it ripens. Wonderful when crusted in breadcrumbs, pan fried and served with a fresh berry sauce over a bed of baby greens.

Heavenly:
This cheese has very little surface mold and has a distinctive goat’s milk aroma. As a young cheese it sits slightly firm and has a tart, white wine taste becoming creamy and quite pungent as it ripens.

Moonlight:
This cheese is distinctive with a soaked grape leaf laid on top before ripening. Showing very little white mold, Moonlight has a tart yet aromatic taste. It becomes very creamy, while remaining agreeably mild.

Picolo
Misty- like with its coating of Charbon Vegetable (vegetable ash) before ripening. Picollo also displays an earthy character. This cheese has a distinctly mushroom-like flavour and becomes quite piquant and creamy when fully ripened.

Chabichou:
Stylistically this cheese is very similar to the French Chabichu (found abundantly throughout Loire Valley) and also has the appearance of a young crottin de Chavignol. It develops a bloomy white mold and is known for its increasing sharpness and creaminess. It’s flavour becomes slightly piquant when fully ripened.

Chevry Dill & Onion
Fresh goat cheese wrapped with dried Dill and onion. Smooth and creamy texture.

Fresh goat cheese wrapped with a special mixture of herb du province like thyme, tarragon, lavender, and rosemary. Very smooth and creamy texture.

Carmelis Feta:
Our Feta is traditional in flavor and style to the famous Greek Feta. It can be sliced, cubed, or crumbled for traditional and /or innovative dishes. It gives us great pride to provide to you, a consistent and delicious Feta with such a creamy texture. If you like feta, you’ll love ours.

Yogurt Cheese / Labane
This is yogurt made thick and rich by straining it for 24 hours in cheese cloths to drain the moisture, hence Yogurt Cheese. You can enjoy this dish as a dip or spread of many natures. In our sample we have used a spice called Za’atar (hyssop, parsley, sesame seeds, salt and oil), imported from Israel.

Carmel:
Approximately one year old, Carmel is comparable to an aged Cheddar/Parmesan and can be used in similar situations as both. Grate and broil as cheese crisps to dress up your favourite salads and pastas, or raw on pasta, in sauces or dressings. You can also enjoy this cheese as a partner to many local wines.

Smoked Carmel:
Identical in structure and age to Carmel, this cheese is liberated by its infusion of smoked hickory oil. A healthy alternative to bacon or other smoked meats and fish. Smoked Carmel holds its own atop a spinach salad, pasta, soup or gourmet pizza.

Lior:
Aged to perfection (approximately 2 years). This cheese has a wonderful granular texture allowing it to be easily crumbled grated or flaked onto salads, pastas and dips. Comparable to Italian Asiago and Spanish Manchego in its sweetness, sharpness and yes, nuttiness, too.

Lior Special Edition:
One year old with the same building blocks (bacteria) as Lior, but riddled with whole peppercorn and surrounded by bay leaves. With such an infusion this cheese cant help but be delicious. Recommended for soups and pastas and cheese nibblers alike.

Vintage:
This cheese is truly Okanagan, not only has the cheese itself been created at Carmeli’s Goat Cheese Artisan Inc., but it has also been soaked for five whole days in local pinot Noir wine and Foch grape skins (for tannin) and then aged for 1 year. Perfect as a conversation piece aboard a cheese platter or delicately shredded on a favourite salad.

Tuscany:
Approximately 8 months old and the youngest of all our aged cheeses. Tuscany is comparable to Swiss, Provolone and Mozzarella cheeses. It has a unique fruitiness and is recommended with complimenting ripe fruit (particularly grapes) and like any of our cheeses, wine. It melts beautifully on sandwiches, Mushroom caps, soups, fondue, and other such favorites.

Smoked Tuscany:
A new edition to our aged cheese selection aged for 7 months. Otherwise similar to Tuscany, we have used smoked hickory oil to infuse this cheese. Imagine a smoked Swiss/Mozzarella type perfect for adding a flare to lasagna, pizza and more. This cheese finds an elegant match with ripe fruit and local Chardonnay.

Goatgonzola:
This is our Blue Cheese created using the ‘famous’ penicillin Roque Forti, found in the best blue cheeses all over the world. With an ending like ‘gonzola’ you would expect this cheese to be soft and gooey, however it is crumbly and rich with gonzola like sweetness, nuttiness and earthiness.
